Central Coast Collection


This cheese collection is as varied as the Central Coast weather!  The forecast is sunny today though, this collection contains six of our customer favorites.


Seascape is made from a blend of cow and goat milk.  It is a semi-hard cheese with a slightly crumbly texture and a complex tanginess that make this cheese a true American Original.  (~14 oz)

Goat Cheddar

Goat Cheddar is made from 100% whole goat milk.  It is semi-hard and pure white with a smooth, velvety texture.  This is an exceptional cheddar that is made in a unique wheel form instead of a standard cheddar block.  (~14 oz)

Holey Cow

Holey Cow is made from %100 whole cow milk.  This semi-soft cheese is filled with small round openings characteristic of a Swiss cheese but with a smooth, creamy texture and a crisp, buttery finish.  (~14 oz)


This 100% sheep milk has a brilliant velvety white paste and a delicate texture.  This extremely complex cheese boasts incredible sweetness and flavors redolent of salted caramel and fresh vanilla beans with a slight hint of citrus to contrast the savory qualities of the sheep milk. (~14 oz)

Big Rock Blue

Big Rock Blue is a pure cow milk blue cheese.  This cheese has an ivory colored paste laced with brilliant teal veining.  With a light pressing the cheese maintains a curdy texture reminiscent of fudge, making it ideal for towering on a cheese plate or as a crumbly addition to your favorite salad!  Big Rock Blue is mild and approachable yet brimming with hints of fresh butter and salty bacon. Goat Gouda

Goat Gouda is made from 100% whole goat milk and goat cream and aged on pine wood in our ripening room for at least 5 months.  This semi-soft cheese is ivory colored with a smooth mouth feel and the slightly grainy texture of an aged cheese.  Goat Gouda has a caramel scent and a slightly nutty and sweet flavor.
