Reggie Jones - Owner

Reggie earned a degree in Biological Sciences at Fresno State University and then went to work in his first cheese plant as a quality control supervisor for Gardenia Foods and California Gold Dairy Products.  He was promoted to production manager for California Gold Dairy Products, Turlock Cheese Association, and Dairy Farmers of America.  He then went to work as the vice president of operations for Evolutionary Ingredients Group, a company that provided technology to refine whey and produce commodities such as whey protein isolates (WPI) for sale to consumers.  Recently, Reggie was the western regional sales manger for Chr. Hansen, selling cultures and enzymes.

The experience and contacts that Reggie made in the last 25 years working in the dairy industry have proven invaluable in developing our cheeses and putting together the programs and processes to run our creamery.

Before starting Central Coast Creamery all of Reggie's former experience in cheesemaking has been in processing at least 200,000+ gallons of milk daily!

Kellie received a Biochemistry degree from Cal Poly San Luis Obispo and a Pharmacy degree from the University of the Pacific in Stockton, CA.  Kellie worked for several years as a community pharmacist for Raley's Supermarkets in Modesto, CA, where she specialized in immunization, diabetes education, and women's health.  Most recently, she was a Pharmacist for Rite Aid in Paso Robles before joining the company this year.  Kellie's focus at the the creamery is to organize our office and inventory systems and the perform miscellaneous tasks in the creamery as required.


Lindsey Mendes - Cheesemaker

Lindsey Mendes - Cheesemaker

Lindsey completed a degree in Dairy Science from Cal Poly San Luis Obispo.  During college she worked at the Cal Poly Dairy, where she received training and experience in all aspects of dairy operations.  Technically, she has been in the dairy industry her entire life, however, because she grew up on a cattle feed ranch and heifer lot in Hilmar, CA!  She started with Central Coast Creamery about 6 months prior to her graduation from college as an assistant cheesemaker and quickly worked her was up to being our head cheesemaker and creamery supervisor.

 Phoebe Parros - Cheesemaker

Phoebe earned a degree in Musicology from the University of California Los Angeles and worked in the movie industry in New York City and Los Angeles before entering the world of artisanal cheesemaking.  She went to school in France to study cheesemaking and spent time on small family-owned farms learning centuries-old French cheesemaking techniques.  Upon her return to the United States, she worked as an intern at Jasper Hill Farm and as a cheesemaker for Twig Farm in Vermont before returning to California.  Phoebe started with the creamery as an assistant cheesemaker and has been instrumental in developing our quality control and food safety programs. She is currently working as a cheesemaker and is helping to create our new soft-ripened line of cheeses.


Kelly Boicourt - Cheesemaker

Kelly is a 2016 graduate of the University of California Davis where she majored in Animal Science.  While at UCD, she worked at the University’s goat facility where she learned feeding, milking, and care of goats.  She also completed Goat Milking, Goat Kidding and General Goat Management Internships as a student.  She is training to be a full-time cheesemaker in the creamery.  Her strong background in dairy uniquely qualifies her to be an excellent milk handler and processor.  She is also a former President of Delta Gamma Sorority and she is a fun and friendly addition to the staff!

Lauren is the person who has been with us the longest.  She was our babysitter before coming to work in the creamery!  She is now working part-time as an assistant cheesemaker while attending Cuesta College in San Luis Obispo.  She also performs many of the daily tasks, such as coating, packaging, and putting orders together.  

 

             Tori Mansfield

             Tori Mansfield

Tori adds the fun factor to our creamery.  She is bright, friendly and outspoken.  She is working part-time in the ripening and packaging rooms.  She is a master at cut-and-wrap.  At Christmas time, we were overwhelmed with orders for cuts, and Tori rocked the task - usually while listening to her favorite music!
